Hy, I'm Federico, but you can call me"Fred"
I'm a cooking teacher and professional pasta maker.
What I love most is cooking and eating with friends and meeting new people. I started making homemade pasta at the age of 10 when I helped my grandma prepare Sunday lunch.
For part of my life, I have traveled for work and so I have learned English and to share experiences with people.
Now I work as a pasta maker and as a teacher in my pasta lab in Milano. I make video recipes and I collaborate with agencies for the preparation of tutorials related to gastronomy and catering. With the arrival of summer I have opened the doors of my kitchen and of an exclusive secret garden in downtown Venice.
I will tell you about "my Venice" through the soul Kitchen of this city. I define myself as a person who gives the best when he is in good company and works in a team.

Milan
Becoming an Italian pasta master
Our pasta-making class is fun, creative, interesting, professional, and will turn you into an Italian pasta expert! I am Federico, a professional pasta maker, and under my guidance, you will learn every secret about making fresh pasta.
It's a hands-on experience, so be prepared to pull up your sleeves and put your hands in the dough!
You will knead, cut, roll and fill ravioli, tagliatelle, tagliolini or other formats.
I will prepare with you authentic, fresh Italian pasta, with or without eggs, in different shapes and sizes and I will teach you the secrets of making colored pasta and stuffed pasta. I will help know the best filling and sauces for your pasta dishes.
Recipes are all based on freshness, high quality of ingredients, tradition, and, most of all my long experience. With my expert guidance, you will be mastering homemade pasta in your own kitchen like a pro!
This class is highly recommended for families with kids.
It will be an informal cooking class, as with friends; there is no particular dress code, the important thing is that you relax and have fun.

Venice
Soul Kitchen in a Venetian secret garden
With the arrival of summer, I have opened the doors of my kitchen and of an exclusive secret garden in downtown Venice. I will tell you about "my Venice" through the soul kitchen of this magical city.
We will start with a welcome aperitif in the garden with the typical "Spritz" which I will tell you its story of and I will teach you my "secret recipe, then we will move to the kitchen and prepare together the specialties of this city such as fresh pasta and" Cicchetti ".
The "Cicchetti", which in Latin means "small quantities of food" is the symbol of Venice and is a dish with various tastings of local specialties based on meat and fish such as creamed cod, sardines in saòr, mackerel fillets, meatballs!
Then, depending on the season, we will prepare together the typical pasta of my city, the "Bigoli", that we will make "in sauce" of anchovies made with the press. Alternatively, we will prepare ravioli stuffed with cod.
Different combinations are possible for vegetarians or vegans.
Finally, my homemade tiramisu, the classic one with coffee or the one with fruit. As you know, tiramisu is one of the most famous Italian desserts and was created near Venice.

Federico was a fantastic host, he was incredibly kind and generous as well as a very patient teacher. We both loved that he shared his personal knowledge and experience with cooking and made it clear that this was simply his way and not 'the only' way. The food was delicious and the experience of making pasta from scratch as well as the pesto and ravioli filling is one we will never forget. He made it simple and I will definitely be trying to make the recipes again!
